Broccoli Salad Recipe for Seniors & Their Caregivers

It’s hard to cook for one or two people. You don’t want a huge bowl of leftovers, but you also don’t want to live off unhealthy convenience foods. Whether you are a senior looking for new and healthy recipes or a family caregiver in need of something nutritious, yet easy to make, it’s important to find healthy meals that promote overall health. One of our favorite options here at Home Care Assistance Westfield is a simple broccoli salad which can be eaten as an entire meal for lunch or as a side with dinner.
For This Recipe, You’ll Need:

  • 8 slices turkey bacon
  • 2 heads of broccoli
  • 1.5 cups of shredded cheddar cheese
  • ½ of a large red onion, chopped
  • ¼ cup red wine vinegar
  • 1/8 cup sugar substitute (Splenda)
  • 2/3 cup Greek yogurt
  • 1 teaspoon of lemon juice
  • Salt and pepper to taste

Mix the vinegar, sugar, Greek yogurt, lemon juice, salt and pepper together for the dressing. Then, chop up the broccoli and turkey bacon. Mix everything in a large bowl for a great dish that even the grandkids will enjoy. You can also choose to leave out the bacon, replacing it with another protein such as shredded chicken.

Benefits for Senior Health

Using vegetables in their raw form means that you and your aging loved one will receive more of their great vitamins and minerals such as potassium which will benefit your nervous system, and magnesium and calcium which help regulate blood pressure. You’ll also take care of your bones with the high levels of calcium and vitamin K packed into this dish, and the beta-carotene found in the vegetables will help boost your immune system.

The other ingredients in this recipe also provide seniors with a variety of benefits. Cheese is known to help seniors maintain bone strength and red onions contain a bioflavonoid that can help scavenge free radicals and boost the immune system. Even the red wine vinegar offers a health boost, containing resveratrol and polyphenols. This duo is known to help reduce cell damage and can help ward off dangerous infections.
