Broccoli Salad Recipe for Seniors & Their Caregivers

It’s hard to cook for one or two people. You don’t want a huge bowl of leftovers, but you also don’t want to live off unhealthy convenience foods. For This Recipe, You’ll Need:

  • 8 slices turkey bacon
  • 2 heads of broccoli
  • 1.5 cups of shredded cheddar cheese
  • ½ of a large red onion, chopped
  • ¼ cup red wine vinegar
  • 1/8 cup sugar substitute (Splenda)
  • 2/3 cup Greek yogurt
  • 1 teaspoon of lemon juice
  • Salt and pepper to taste

Mix the vinegar, sugar, Greek yogurt, lemon juice, salt and pepper together for the dressing. Then, chop up the broccoli and turkey bacon. Mix everything in a large bowl for a great dish that even the grandkids will enjoy. You can also choose to leave out the bacon, replacing it with another protein such as shredded chicken.
